I recently rediscovered one of my mother’s recipe cards for what she called Mexican Casserole. We called it, “that cheesy thing with Fritos™ that mom used to make.” It’s hearty with a great cheesy and corn tortilla flavor. I made this for dinner a few nights ago. It was tasty and it brought back some fond memories. One thing I’d advise if you decide to make this is to up the spice level. Mom was not a spicy person. She was the kind of person who picked up the mild jar of salsa and thought that was too hot. Ha! Also, her recipe is doubled because she’d always make a second one for the freezer. So, half everything if you just want to try it out.
Carleta’s Mexican Casserole
1 medium onion (chopped)
1 small can of diced green chilies
2 Lbs. lean ground beef
1/2 tsp. salt
1/4 tsp. black pepper
2 cans of cheddar cheese soup
2 cans of cream of chicken soup
2 large cans of evaporated milk
1 medium bag of shredded cheddar cheese
1 medium bag of corn chips (Fritos™)
12 uncooked corn tortillas (tear each one into pieces)
Mix onion, chilies, and ground beef in a large pan, and brown. (Drain if you need to.)
Add to ground beef mixture, cheese soup, chicken soup, and milk. Bring all ingredients to a boil.
Coat two 11” x 13” pans with cooking spray. Remember you are making 2 pans so divide all ingredients equally. Layer ingredients starting with ground beef mixtures, tortillas, corn chips, and cheese. Do the 2nd layer. 3rd layer will only have ground beef mixture and top with cheese.
Since the ingredients are already cooked, all you’ll need to do is put the pans in a 350° oven and heat them for 30 minutes. Be careful not to burn the cheese topping.

I've been keeping busy at the office, so I'm still listening to Spotify background music. I did mix in a little higher energy rock to go with the low-key Jazz and Lofi. This past week's primary playlists were Lazy Jazz Cat, Lofi Hip-Hop, and Running to Rock 170-190 BPM.
I'm about halfway through Johannes Cabal the Detective by Jonathan L. Howard on Audible. This is the second book in the Johannes Cabal series. The first book Johannes Cabal The Necromancer I listened to a few months ago, quite good.
